La Perle Vintage Sardines 2020

Nostalgic for the mildness of the Vendée coast and the passionate embrace of her sailor, Mademoiselle Perle returns to Saint-Gilles-Croix-de-Vie in search of calm and serenity. Designed and painted by the Nantes artist Delphine Cossais, this painting delicately sublimates this new setting for sardines from the 2020 vintage.

Fished at the height of the season off the coast of Saint-Gilles-Croix-de-Vie, vintage sardines reflect the know-how of excellence perpetuated since 1887. These sardines with an exceptional fat content (more than 12%) are real vintages for laying down for up to 10 years, taking care to turn them over every six months. A decade that allows them to tenderize and confit, an essential ritual to appreciate all the qualities of these precious sardines.
