Description
The estate uses controlled fermentation in stainless steel vats with indigenous yeasts, and the fermentation is controlled by successive racking. Afterward, the cider is transferred into 400-liter barrels that previously held Calvados, where it slowly improves for six months. The cider is unpasteurized and bottled six months later.
The cider is certified organic by FR-BIO-09, and no sugar or gluten is added. It contains 7.5% alcohol by volume, and the density (O.G.) is 1060 after pressing, which is equivalent to 127g of sugar per litre. It has 1020 density when bottled, which gives 7.5% alcohol after bottle fermentation has finished.
Cidre Dupont Reserve has fine and light bubbles with a gold color and orange reflections. It has a fine and delicate scent of roasted apples underlined by notes of vanilla and mild spices. On the palate, it is delicate, powerful, and complex, with round and intense flavors of caramelized apples and baked prune. It has a very long finish supported by a slight bitterness.
It is recommended to keep the bottles upright and can be stored for 4 or 5 years in good conditions. Because the cider is on its lees, it will improve and become more complex. It is best served between 8 and 12 °C (46 to 54°F) as an aperitif, or to accompany white meats or cheeses. It is also excellent with apple-based desserts or pancakes.
