The Lune d’Argent cuvée from the Clos des Lunes estate is a wine of rare elegance. The estate gives it these three characteristics: it is precise, balanced and has character. It comprises 70% Semillon (the king of Sauternes grapes, which Olivier Bernard intends to deliver to the consumer at its best) and 30% Sauvignon Blanc. The vines, pampered and worked with the most tremendous respect, are 35 years old on average. They are planted in gravel (in Sauternes and Bommes) and red clay (in Barsac) soils.
Arrived at the cellar, the bunches are sorted and undergo a slow pressing in a pneumatic press. The ageing is carried out for about six months, 25% in French oak barrels which bring a light woody touch to the Semillon and 75% in vats. These latter containers preserve the natural freshness of the fruit.
This wine exudes the aromas of white fruit, citrus, white flowers, and acacia honey. It is superb with delicate dishes such as white meat or noble fish.
