SESSION 1: Sensory Analysis – Taste
Date: Tuesday 14th November 2023 at 7 pm
You appreciate wine better by using all your senses. During the first course, we will introduce the basic senses and learn to appreciate wine using the five tastes while using six grape varieties – Sauvignon Blanc, Chardonnay, Riesling, Pinot Noir, Merlot & Cabernet Sauvignon. Welcome to the world of wine!
SESSION 2: Vineyard to winery – Nose
Date: Tuesday 21st November 2023 at 7 pm
The first part let us study grapes and today is time to learn about grape production, understand the term terroir and the factors affecting vines and grapes. Wines are often characterized by their main fruit flavours. We will learn to identify and differentiate types of aromas in wines. Through tasting, we can understand how to detect all the aromas present in different wines and help you to understand and define your preferences through your own experience.
SESSION 3: Winemaking – Acid and Minerality
Date: Wednesday 22nd 2023 at 7 pm
From harvest to the winery, the first part of lesson 3 is about winemaking, how whites, rosés and reds are made, and exploring the secrets of a winery. In the second part, we identify the flavours on the palate, and we will discover what exactly minerality in a wine, is and what it tastes like. Where does it come from? How do you identify acidity? It is what makes a wine refreshing and the reason for encouraging you to take another sip! This fascinating lesson will teach you all about taste –sweet, bitter, saltiness and sour, umami. and you will get the chance to sample some exciting wines.
SESSION 4: Eyes – Sparkling and Sweet wines
Date: Tuesday 28th November 2023 at 7 pm
In session 4 of the wine course, we will learn what we can assess from looking at wine, and work on tears and legs. Excitement will be high when we taste sparkling wines. You will learn about the bubbles, how they are made, and the difference between Champagne and Prosecco. You will also taste some stickies, and dessert wines to die for.

SESSION 5: Tannins, Body, Balance, Aftertaste and…
Date: Monday 4th December 2023 at 7 pm
On the final day, we understand and identify tannins in red wine and their role. Ageing high-quality fine wine in wood barrels is favourable to any other ageing method, enhancing the flavour and quality. We will discuss the many different types of oak barrels while you taste a selection of beautiful wines and define what we consider fine wine. Body, balance and length are next and wine on aftertaste. Serving temperature is important as well as the right shape of the wine glass. How to store your wine? Crucial when you start your own collection. We will have the opportunity to discuss some excellent food matchings of reds and whites of all ages.
